Ingredients
- 10 oz store-bought pimento cheese
- 1 bunch of fresh dill chopped, remove thick stems
- 1 oz block sharp Cheddar cheese
- 1 box of Ritz crackers
- Plastic wrap
- pomegranate seeds as garnish, optional
Preparation
- Using a a piece of plastic wrap, sprinkle some of the fresh dill.
- Scoop 2 tablespoons of pimento cheese on the plastic wrap.
- Roll and shape the pimento in the shape of cone, making sure its covered in dill
- Repeat to build as many trees as possible.
- Refrigerate for about 20 min. to firm up but not too long
- Meanwhile, slice thick piece of cheese and cut a small star with a cookie cutter
- Assemble by placing a tree on top of a cracker and placing a cheese star at the top. Place a few pomegranate seeds around the tree to look like lights.
- Refrigerate for at least 20 min.
Note: If dill isn’t your favorite herb, you can use, parsley, cilantro or basil. If none of those herbs are to your liking, think dyeing cheese a shade of green and rolling the pimento cheese on it.
