Ingredients
- 8 baking potatoes, washed
- 3 tbsp vegetable oil
- 2 sticks of salted butter at room temperature, sliced into small pats
- 1 cup of fried bacon, finely chopped
- 1 cup of sour cream
- 1 cup of sharp cheddar cheese
- 1 cup whole milk
- 3 green onions, sliced
- Pepper, to taste
Preparation
- Preheat the oven to 400° F.
- Place potatoes on a baking sheet, cover them with the oil and bake for 1 hour, until completely cooked
- In a large mixing bowl mix butter, sour cream and bacon.
- Remove potatoes from oven and lower temperature to 350° F.
- Using a paring knife, cut potatoes almost in half, leaving the bottom intact. Scrape out the inside of the potatoes into mixing bowl.
- Add milk, sour cream, cheese, green onions and pepper to the mixing bowl and mix everything.
- Fill the potato shells and top them with more cheese. Bake for about 20 minutes or until the cheese is golden brown.
